Autumn is one of my favourite times of the year - leaves falling off trees, visits to the pumpkin patch, and an excuse for deliciously spiced bakes!
I searched for a LONG time to find a pumpkin pie recipe that was gluten free, or any good, so I created my own. Don't be put off by the orange colour - if you've ever had a custard tart, this is a little similar in texture and in spices!
I know the nutmeg I have added isn't totally traditional, but it makes a delicious addition to the pie! I really hope you enjoy this one - it's a favourite of mine!
When making your pastry, be sure to punch your dough a few times before rolling it out - it'll stop your pastry from cracking!
