Lemon "Meringues" (GF)
Lemon Meringue pie is great, but have you ever had a simple Lemon Meringue?
A meringue with a crunchy outer shell and a chewy centre, filled with a lemon posset and topped with a lemon curd - the perfect balance of sweetness and tartness - this is a must-try!
The meringues themselves will keep in an air-tight container for up to a week too (unfilled of course!!)
Helpful Hint!
For piping your meringue "nest", I used a Wilton 1M tip, and created a meringue circle base, then a raised outer circle!
