Like many other children, a birthday "Colin the Caterpillar" was a MUST growing up. A hard chocolate shell, encasing chocolate frosting, a chocolate Swiss Roll and that thick white chocolate face & white chocolate feet! (Please tell me I wasn't the only one who used to hope for a "foot" or - if it was YOUR birthday, you could make a bee-line for the Colin face haha!)
As I am sure you are aware there are a couple of gluten free Colin-knock-off's on the shelves of some UK-based supermarkets, but they are coated in chocolate fondant icing, and ALAS, it just isn't the same!
So, whilst I am still petitioning M&S to make a GF Colin (please guys, it's much needed!), I noticed that they had started selling Colin the Caterpillar mini faces (they sell the big one too, so you could make an actual GF Colin - but that's a task for another day!). I decided to create Colin the Caterpillar Pop's! Chocolate cake pop bites, with a chocolate shell and a Colin Face! I hope you like them!
When you place the cake pops onto your baking paper to set, it will leave you with the perfect flat edge - use this as the side you attach your Colin face onto!
