A twist on a classic - a baked spinach dip, with puffed pastry crackers to scoop up the cheesy deliciousness! Yes - I know what you're thinking - it's A LOT of cheese, and you'd be correct - but this is such a great starter to serve, or an addition to your after dinner cheese board! Forget fondue - spinach dip is the way to go!
For the puffed crackers in this recipe, I used some small festive cookie cutters, and seasoned them with salt & pepper, and sesame seeds - but really, you could season them with anything of your choosing! I hope you enjoy making these - it's a truly indulgent dish!
When spooning in your spinach dip to the individual ramekins, make sure you have some spinach visible from the top, that way, you'll get a dish with browned cheese and the contrasting green rom your spinach (it counts as one of your five a day, right?!)
